I love to cook. Let me rephrase that, I am obsessed with cooking! I love to try new recipes and discover new techniques. I have been attempting to further my repertoire and build our Burke Family Cookbook with recipes that we love. So on that note, over at House of Burke, we have deemed Tuesdays - Tasty Tuesday! Every week I hope to showcase a recipe or recipes that I have recently tried. Generally, those recipes will come from Pinterest. Pinterest is an absolute treasure trove for everything, but I can never seem to stop pinning delicious looking recipes! This week, I was looking to throw together a quick menu plan for the end of the week full of comfort food that was different then what we normally eat. I stumbled upon this delicious looking casserole. You can find the original link here - Potsie's Creamed Chicken and Biscuit Casserole. It looked simple, yet interesting enough to fuel my love for cooking! I loved the concept of the biscuits over the top, the creamy insides, and the red peppers! I have a new found love of red peppers both cooked and raw! We have recently started enjoying them raw in salads; and I was looking forward to finding a new use for them since they are so good for you.
For the most part I followed the recipe as is. However, instead of using a 1/2 of cooked red bell pepper, I diced two whole red peppers and sauteed them. I also added more onion to it. For the chicken, I used boneless, skinless chicken breasts and diced and cooked them right next to the peppers and onions in two separate pans, multi-tasking at its finest!
We did have an issue with the biscuits in the recipe. We bought the over-sized Grands type biscuits and layered them on the top as instructed. Unfortunately ours didn't cook through and we were left with raw biscuits on the underneath. We ended up cooking the casserole for double the time listed in order to cook the biscuits throughout. The casserole was absolutely delicious. This is not a low-fat dish by any means. In fact, it is awful for you! It was very rich and very filling. The original recipe link has some options to make it a little lighter. Todd went wild over this dish! He was obsessed. In fact, he licked his plate. Like literally, he licked it. I found myself doing the same! We loved the peppers and the chicken was nice and tender! Next time I make it, (hubby has already requested that I make it sooner rather than later!) I will use a much larger casserole dish and slice the biscuits in half so that I have double the amount of biscuits. I think that will help to cook the biscuits throughout in the time that the original recipe allotted. This recipe will be going into the Burke Family Cookbook for sure!
