Tasty Tuesday: Rainbow Cake

I have been thinking about trying my hand at a rainbow cake for awhile now. They are all over Pinterest and the blogosphere in every shape and size. I've always thought they were so phenomenal. They make such a statement! So a couple of weeks back, I decided to try my hand at making one. It was so fun, the outcome was awesome, and it was deliciously exciting to eat! In honor of St. Patrick's Day, I thought I'd share my method of making this colorful cake!

What you will need: a box of white cake mix, food coloring, a bundt cake pan, and rainbow chip frosting

First, I mixed the cake batter as directed on the box. I separated all of the batter into six bowls and cups. Then I mixed the food coloring in until the color of the batter was to my liking. 


Then I layered each batter one at a time into the pan in rainbow order. The layers do not need to be perfect. I just tried to make them even by spreading each one with a clean spoon. This recipe definitely takes a bit more time and cleanup than making a cake mix by itself, but the cake turns out much better! I baked it as directed by the box instructions.




I have made this cake several times since and every time I have brought it somewhere, everyone has gotten quite a kick out of it! Even though food coloring is not the healthiest additive for your food, there is something very exciting about eating something so vibrant and beautiful. This would be a great treat for the kids for their St. Patrick's Day dessert! You could even dye the frosting yellow to symbolize "leprechaun's gold".

  2. I love this rainbow cake idea. The colors are very vibrant and it looks like fun to eat! When our little ones are a little older and know more about rainbows, I will try it! I am pinning this to the Creative Ideas from Moms board by Circle of Moms.
