Tasty Tuesday - Turkey & Veggie Meatloaf Minis

I first tried these cute little mini meatloaves at my friend Erin's house! She made them for girls night and  I really liked them. They are packed with vegetables and lean protein. Plus their flavor is unique enough that they seem new and exciting!

The original recipe I used was the Hungry Girl Turkey & Veggie Meatloaf Minis, but I ended up tweaking it a bit!


For ingredients and amounts, you can check out the link above. I substituted the egg beaters for two whole eggs, the quick cook oats for quick cook steel cut oats, and I added the entire bag of broccoli slaw. This was such a simple recipe! All you do is combine everything in a bowl, divide it into a sprayed muffin tin, and top with some ketchup! Then I popped it right into a 350* oven for 35 minutes. Easy peasy!




The broccoli slaw adds a really unique flavor to the turkey meat. I love to eat these for dinner after a workout because they are full of great ingredients. They also keep really well! We ate ours for dinner with hubby's famous Parmesan broccoli (this recipe will be making a Tasty Tuesday appearance soon .. it's delicious!)
