I love making Kingston healthy, organic foods to eat and enjoy! It is so much fun to introduce different flavor combinations and try to get as many healthy ingredients packed into one recipe as possible. I have a Pinterest board dedicated to baby/toddler food ideas. I used that board the other day when I was looking for a muffin recipe to make for K. I have made him plenty of delicious, organic muffins in the past based off a simple base recipe. My initial inspiration was to make Mummy Musings and Mayhem's Carrot, Pumpkin, and Sweet Potato muffins. I ended up using that recipe as a starting point, and coming up with my own!
For this recipe, you will need:
- 1 C. Organic Unbleached All-Purpose Flour
- 1 C. Whole Wheat Organic Flour
- 2 TSP. Baking Powder
- 1/2 C. Organic Light Brown Sugar
(I didn't have any organic on hand that day!)
- 1 C. Organic Pumpkin
- 2/3 C. Organic Sweet Potato
- 2/3 C. Cooked Diced Carrots (this is what we had on hand, but you could use fresh shredded if desired. Kingston likes the chunks of carrot in his muffin!)
- 4 Cage Free Organic Eggs
- 1/4 C. Organic Unsweetened Applesauce
- Organic Coconut Oil
(to grease)
Combine dry ingredients first. Then add wet ingredients. Mix until combined, and then pour into a greased muffin tin. Bake at 350* for 20-22 min. This recipe makes 24 muffins.
And what did the toddler think? ...
These muffins definitely taste healthy. They may not be for everyone, but Kingston really likes them! I think most toddlers will. They are sweet without being overpowering, and are jam packed with three different vegetables and a fruit! Plus they are organic, which is always a plus. The sugar content is super low too. I have been giving them to K for breakfast every morning, but they make great snacks too! I would recommend refrigerating them. I put a few in the refrigerator and the rest in the freezer. They freeze very well, and defrost in seconds.
